| dc.description.abstract | Tato bakalářská práce se zabývá problematikou bezlepkového stravování ve veřejném prostoru, a to především z hlediska dostupnosti bezlepkových hlavních jídel v restauračních zařízeních. V teoretické části je nejprve popsána celiakie a další onemocnění spojená s bezlepkovou dietou. Dále je rozebrána samotná bezlepková dieta, její základní pravidla, zásady bezpečné přípravy jídel a možná rizika spojená s nedodržováním diety nebo s jejím nevhodným složením. Součástí teoretické části je také zmínka o legislativních požadavcích na označování alergenů a zajištění bezpečnosti pokrmů pro osoby s bezlepkovou dietou. Praktická část práce se zaměřuje na průzkum dostupnosti bezlepkových hlavních jídel v restauračních zařízeních ve městě Plzeň. Cílem výzkumu bylo zjistit, jaké možnosti mají osoby dodržující bezlepkovou dietu při stravování mimo domov a do jaké míry restaurace vycházejí vstříc jejich potřebám. Sběr dat probíhal formou osobních návštěv a analýzy jídelních lístků, přičemž byla hodnocena nejen samotná nabídka bezlepkových pokrmů, ale také informovanost personálu a způsob označování jídel. | cs |

It then examines the gluten-free diet itself, including its basic principles, guidelines for safe food preparation, and potential risks related to non-compliance or improper dietary composition. The theoretical section also touches upon legislative requirements for allergen labeling and ensuring the safety of meals for individuals following a gluten-free diet. The practical part of the thesis focuses on researching the availability of gluten-free main dishes in restaurants in the city of Plzeň. The aim of the research was to determine the options available to people adhering to a gluten-free diet when eating outside the home and to what extent restaurants accommodate their needs.
