dc.description.abstractDiplomová práce se zabývá tématem cirkulární ekonomiky v pivovarnictví a zaměřuje se na analýzu implementace cirkulárních principů ve vybraných pivovarech. Teoretická část objasňuje základní rozdíly mezi cirkulární a lineární ekonomikou, poskytuje ucelený přehled o oběhovém hospodářství, rozebírá metody měření cirkulární ekonomiky a shrnuje iniciativy oběhového hospodářství v EU a ČR. Empirická část se zabývá analýzou implementace cirkulárních principů v malých pivovarech Zichovec, Obora a v experimentálním pivovaru Elektrárna. Výzkum je proveden formou strukturovaných rozhovorů se zástupci pivovarů. Cílem výzkumu je zjistit, zda a jakým způsobem pivovary implementují principy cirkulární ekonomiky do svého provozu. Získaná data ukazují, že se cirkulární ekonomika stává v pivovarnictví důležitým tématem. Všechny tři pivovary se snaží o snižování dopadu na životní prostředí a o maximální využití dostupných zdrojů. Výsledky ukazují, že nejlépe principy cirkulární ekonomiky implementuje pivovar Obora. Na základě zjištění výzkumu jsou navržena doporučení s cílem zefektivnit implementaci cirkulární ekonomiky v pivovarnictví.cs
dc.description.abstract-translatedThis thesis deals with the topic of circular economy in the brewing industry and focuses on the analysis of the implementation of circular principles in selected breweries. The theoretical part explains the basic differences between circular and linear economy, provides a comprehensive overview of the circular economy, discusses the methods of measuring the circular economy and summarizes circular economy initiatives in the EU and the Czech Republic. The empirical part deals with the analysis of the implementation of circular principles in small breweries Zichovec, Obora and in the experimental brewery Elektrárna. The research is conducted in the form of structured interviews with representatives of the breweries. The aim of the research is to find out whether and how the breweries implement the principles of circular economy in their operations. The data collected show that circular economy is becoming an important issue in the brewing industry. All three breweries strive to reduce their environmental impact and to maximise the use of available resources. The results show that the Obora brewery implements the principles of circular economy best. Based on the research findings, recommendations are proposed to improve the implementation of circular economy in the brewing industry.en
