dc.description.abstractTato bakalářská práce pojednává o sacharidech v potravinách a metodách jejich stanovení. Popisuje nejvýznamnější zástupce jednotlivých skupin sacharidů, jejich chemickou strukturu, výskyt a následně i jejich význam ve výživě člověka. Dále se zabývá zdravotními riziky, která mohou sacharidy způsobovat a možnosti alternativních sladidel, kterými lze sacharidy nahradit. Jsou zde popsány i základní metabolické děje sacharidů. V praktické části byla testována 3 přírodní sladidla nahrazující běžný cukr a byl zjištěn obsah cukrů, konkrétně glukosy a fruktosy. Praktická část měla ověřit, zda tyto alternativní sladidla jsou vhodnější k doslazování pokrmů než běžný cukr (sacharosa).cs
dc.description.abstract-translatedThis bachelor thesis examines carbohydrates in food and the methods of their determination. It describes significant representatives of carbohydrates' particular groups, focusing on their chemical structure, the occurrence and the significance in human nutrition. The bachelor thesis also explores the health effects of consuming carbohydrates and options of artificial sweeteners which function as a substitute. In this thesis also describe fundamental metabolic actions of carbohydrates. In the practical part of the thesis, there were examined three natural sweeteners that substitute ordinary sugar. The examination determined contain of sugar in natural sweeteners, specifically glucose and fructose. The practical part was supposed to verify whether alternative sweeteners are better for sweetening meals than common sugar (sucrose).en
