dc.description.abstractBakalářská práce je zaměřena na zhodnocení a porovnání kvality poskytovaných služeb v restauracích franchisingového řetězce Potrefená husa. Teoretická část práce se zabývá především franchisingem, formou podnikání, na které je tato síť založena. Pomocí metody mystery shopping průzkumník dle předem připraveného záznamového archu pozoroval, zda byly během obsluhy dodržovány standardy manuálu, které jsou stanoveny franchisorem Pivovary Staropramen, s.r.o. Mystery shopping byl uskutečněn celkem ve třech restauracích, v Potrefené huse na Chodově, v Holešovicích a v Plzni. Po uskutečnění návštěv bylo provedeno vyhodnocení a porovnání mezi jednotlivými restauracemi. Na závěr jsou navržena doporučení, která by mohla zvýšit kvalitu poskytovaných služeb.cs
dc.description.abstract-translatedThe bachelor thesis is focused on the evaluation and comparison with the quality of the services provided in restaurants franchise chain Potrefená husa. The theoretical part is concerned with franchising mainly, the business method, on which this chain based. The researcher observed the right compliance with norms of manual during visits. The franchisor Pivovary Staropramen, s.r.o. prescribes these norms. Process of mystery shopping was followed according to research list, whis is important to mystery shopper. The mystery shopping was realized in three restaurants, Potrefená husa Chodov, Holešovice and Pilsen. After that the visits were evaluated and compared between individual restaurants. The conclusion proposes recommendation how to improve and raise the quality of services.en
